Topman’s Guide to Summer Cocktails

The time of drinking neat spirits to keep your body from slowly freezing to death is gone – long live fruity cocktails! To get your summer started, we’ve selected a few cocktails from our favourite bars and got the barmen behind them to talk us through their creations.


Cocktail name: Happiness Cocktail

Where you can get it: Barts, London

Vincenzo Sibilia, General Manager of Barts: “The Happiness Cocktail from the Mood Menu tastes like summer in glass. The fresh fruit, basil and Russian Standard Vodka work well together to create a refreshing and beautiful cocktail.”

Ingredients: Russian Standard Vodka cherry tomatoes
Basil Leaves
Served in a tall coupette



Cocktail name: Keep Marm & Carry On

Where you can get it: Cahoots, London

Filippo Previero, Bar Manager: “The Keep Marm & Carry On is a great balance of sweet and sour. The lemon curd adds fantastic texture and is perfectly evocative of the 1940s spirit.”

Ingredients: Russian Standard Vodka
Sipsmith Sloe Gin Lemon Curd
Passion Fruit Juice
Homemade Vanilla and Cassia Syrup
Served in a vintage coupette



Cocktail name: The Henrietta

Where you can get it: Mr Fogg’s Tavern

Steve Georgiou, Bar Manager: “The Henrietta is a crisp cocktail that packs a punch with Russian Standard Vodka, raspberries and cranberries topped with a fiery ginger beer that adds a bit of heat. It’s the ideal cocktail to cool down with in the summer.”

Ingredients: Russian Standard Platinum Vodka
Raspberry Puree
Fresh Lime Juice
Homemade sugar syrup
Cranberry Juice
Topped with Ginger Beer
Served in a vintage short glass



Cocktail name: Saint O8

Where you can get it: Beach House, Ibiza

NicG, Head Mixologist: “This refreshing drink is one of our favourites! It is perfectly balanced with an aromatic Mediterranean tone driving the underground whisky flavours of 8O8.”

Ingredients: 40ml 8O8 whisky
25ml St Germain elderflower liqueur
20ml Rosemary syrup
25ml fresh lemon juice
1 Lemon
2 Sprigs of Rosemary
Cubed and crushed ice

Can’t be bothered going Ibiza? Here’s how to mix yourself:
First fill your wine glass with crushed ice to chill it as much as possible. Add 40ml of 8O8, 25ml St Germain, 20ml Rosemary syrup and 25ml of fresh Lemon juice to your shaker. Fill your shaker with cubed ice and shake hard. Empty your wine glass and refill with fresh crushed ice and strain the cocktail over the ice. Give the drink a gentle stir and cap with more crushed ice. Garnish the drink with 2 Rosemary sprigs and a Lemon wheel.

Cocktail name: Coco8 HiBall

Where you can get it: Have to make this one yourself, mate

Ryan Chetiyawardana (International bartender of the year 2015): A sparkling hi-ball of 8O8, Coconut, Ginger and mint, A quick and easy hi-ball that lifts the spice and creaminess of 8O8 into a more-ish drink that changes as it opens out.”

Ingredients: 35ml 8O8
35ml Coconut water
Ginger ale
Mint sprig

How to mix:
Build in a hi-ball over cubed ice, stir briefly, then add spanked mint sprig
